Shutter Love Tuesdays | COOKIES


Biscochitos (Anise Seed Cookies) Recipe:


3 cups unbleached all-purpose flour

1 ½ teaspoons baking powder

1 to 1 ½ teaspoons ground anise

½ teaspoon salt

½ pound lard, softened

½ cup plus

1 tablespoon granulated sugar

1 large egg

2 tablespoons rum, bourbon, or sweet white wine

Topping ¼ cup granulated sugar

¾ teaspoon ground cinnamon



1. Sift together the flour, baking powder, anise, and salt.

2. Beat the lard in a electric mixer, gradually adding the sugar, and cream until extremely fluffy and light, about 8 minutes.

3. Add the egg, followed by the wine, and continue beating.

4. Mix in the dry ingredients, adding about one-third of the mixture at a time. Stop the mixture as you make each addition, and beat no longer than necessary to incorporate the dry ingredients. A stiff pie-crust type of dough is what you’re seeking. 5. Chill the dough for about 15 minutes for easy handling.

6. Dorothy uses a cookie press to form her biscochitos, choosing a fleur de lis design. The results are beautiful. If you don’t own a cookie press, the dough can be rolled out ¼-inch thick on a floured work surface and cut with a small cookie cutter. Avoid handling the dough anymore than necessary. Transfer the cookies to ungreased cookie sheets.

7. Preheat the oven to 350º F, when ready bake the cookies for 10 to 12 minutes, until just set and pale golden. While the cookies bake, stir together the topping ingredients.

8. When the cookies are done, cool for just a minute or two on the baking sheets, then gently dunk the top of each in the cinnamon-sugar topping.

9. Transfer to absorbent paper to finish cooling. Biscochitos, tightly covered, will keep for at least a week.



Yield: 5 dozen Baking Time: 10-12 minutes

Temperature: 350°F, they freeze well for up to a month

My friend and co-worker dedicated this poem for me and I just thought I would share with others who are going through the same situation as myself.

Cancer has seeped into my life again...

I went to the doctor on 3/2; I decieded to go to lunch early to give me time to arrive to the appointment on time. I was informed my Cancer has returned! With the news I got it was obvious I would not be returning back to work. I was and still am devastated, I called my boss and asked for permission to go home. I got home and cried for hours, took a xanix to calm down; it helped because I slept all day. I slept from 11:30am-8:00pm when American idol was on. I then got up ate something and went back to sleep to come into work the next morning.


At work I could not concentrate I have so many things on my mind. My home just flooded a month ago and is still not even in the process of being fixed and now my health is at risk once more. I guess I can’t really do anything but do exactly what I am told to do by the doctors and wish and strive for me to be able to fight this once more like I did before.


I am very disappointed, but there is nothing I can do to change it. All I can do is pray and hope for the best. My little Alex doesn’t know yet, I am going to keep it on the low until the time of surgery because I don’t want him to go down hill emotionally again; he is now doing so well coping with his father passing away. I am so scared to leave him alone. I am not afraid of death anymore, what I am afraid of is leaving my only son little and without a parent; he already lost his father in 2009 and I am so afraid of not being there for him. I ask for your prayers to help me fight this terrible illness. Thank you.

A Letter from Pat Robertson to me... (Thank you) CBN.com

There is healing in the very presence of the Lord Jesus Christ. Continue to pray and fellowship with Him, and let Him be your strength. Continue to ask Him for a revelation of the Father's will for your life. Continue to soak up the nourishment of the Scriptures, growing in your understanding of the Lord and of His love for you. As you praise Jesus, focus on Who He is and all that He is to you. Hold on to Him and He will abide with you, keep you in perfect peace, and


bring healing to your entire being. We are so glad to learn that you have rededicated your life to the Lord. You can be certain that God is delighted with your decision because His love for you is unwavering and enduring. He is our deeply caring Heavenly Father. If we stray from Him in small ways or large, He joyfully welcomes us back to Him.

You can see the depth of God's love for you in that He lovingly called for you to return to Him. Jesus once told a parable about the shepherd who went out searching for one of his sheep that had gone astray (Luke 15:3-7). Another time Jesus said, "Look! I am standing at the door and knocking. If anyone listens to my voice and opens the door, I will come in to him and eat with him, and he will eat with me" (Rev. 3:20, ISV).  Also, you can rest in the assurance of God's forgiveness for you.

Whatever you may have done wrong, He will forgive you when you confess it to Him. You can hold to the promise that if "we confess our sins, he is faithful and just to forgive us our sins and to cleanse us from all unrighteousness" (1 John 1:9, ESV). Don't let yourself continue to feel guilty over something He has already forgiven. Instead, receive the peace and healing He has for your heart.

Now that you have come back to the Lord, be sure to do all you can to strengthen your walk with Him. As you know, prayer is not only beneficial to your spiritual health, it is essential to it. A sample prayer that may be good at this time is what King David prayed after he had sinned: "Create in me a clean heart, O God. Renew a right spirit within me" (Psalm 51:10, NLT).


Devote some time especially for prayer every day. Start by worshipping the Lord. Then let Him speak to your heart and reveal to you any unconfessed sins. Listen for His wisdom and guidance for your life. Ask the Lord for whatever needs you may have.

Also, spend time reading the Bible daily. Let the Spirit of God speak to you through His Word. Think about how it applies to your life. God's promises will encourage you and the teachings of our Lord will guide you. A good place to start reading is Luke chapter fifteen, which has the inspiring parables of the lost sheep, lost coin, and the prodigal son.

It is also important for you to gather together frequently with other
Christians. When you meet with other believers, they can encourage you and support you. You will also be able to encourage them by sharing how God brought you back to Him! There will also be opportunities for you to exercise the gifts God has given you to bless others.

Find a place to be with other Christians who are loving, accepting, and
challenging-people who will help you grow. Make sure that the group believes the Bible is God's Word. Ask God to lead you to the right place. You could attend services in a regular church building or in a house church. Make sure, though, that you develop personal relationships with others, such as in a home group or a Bible study.

I got me some new pillow cases...

I ordered some awesome pillow cases; they are 400 thread count Luxor Treasures Solid Pillowcase from The CSN Online Stores,  a set of 2 is was only $14.99 can't beat that for 400 thread count!!!! I ordered one original set, and one king size set.  The both sets are in Hunter Green; they match my light green comforter set, you should feel how soft they are!  I love them.


Next I am thinking of ordering me some new sheets to match my new pillow cases and my comforter. The 400 Thread Count Striped Sheet Set with Solid Hem are only $35.99.



I am so excited,  I love new sheets especially when they are over 200 threat count; I am a person who can not sleep without sheets, and I have not bought new sheets in over 2 years!!!  No way, awful hu?  I am not a store shopper so shopping online suits me well! LOL

After the rain stops the sun comes up and the rainbow shows up…

There is a saying in Spanish “Despues de la tormenta vuelve a salir el sol y sale el arcoiris” that means “After the rain stops the sun comes up and the rainbow shows up” I guess when unexpected things happen better things arise.
These past two weeks have been very stressful! On Thursday 2/3 when we got home from work and 2 water pipelines had busted and my entire first floor was flooded; we had no idea where to turn off the water it was awful.

The weather here in NM has been so cold hundreds of locations went through this same situation including businesses, and schools. My son was out of school for an entire week due to schools being flooded and the buses not being able to run due to the cold weather. On top of that the governor of NM put NM in state of emergency due to running low on natural gas and blackouts all over the state. Scary situation this is especially when NM never had any disasters or issues.

I have been living upstairs while my 1st floor is completely empty of furniture, the walls are cut about 1 foot off the bottom and fans have been blowing for over a week to dry up inside the walls to avoid mold. Ahhhh I am exhausted and have not been able to sleep peacefully because every noise I hear I think it’s another busted pipe.

I am just so thankful to God it was the 1st floor and not the 2nd floor; that would have been much worse. We have been eating takeout since we have no stove connected and the bad fall on that is I am broke! The insurance adjuster can not go see the damages until 2/14/11 that is 2 weeks waiting, but what can we do.

On other news Alejandro found a job yesterday and started today! This is such a blessing, and is going to be such great weight off my shoulders and a great help for me; I felt like the stress was going to tumble me down with all of these bills we have to pay. I guess God puts us through rough times to appreciate the things we have and don’t have in a whole different perspective.

Hope it all works out with the insurance company because if not I am totally screwed with all the costs  I am so anxious about this whole situation. Hope you all are having a better time than I am. God bless and stay safe.

Wanting a New Laptop messenger bag from one of The CSN Online Stores...

I just got an awesome opportunity to review a product from the many CSN online stores, and I was thinking of getting a new "laptop messenger bag" so I can take my laptop to work to do homework during my lunch hour when I start my classes back up in the Spring. I am excited to start school again, I think I had a good break for now.  I am indecisive of which one to choose, there are so many awesome ones to choose from so I am not too sure which one to pick. @ Sistergirl

Thank you so much for your comment yesterday; I truly appreciated your feedback and it was very helpful.

So Alexandro’s aunt called me yesterday to see if they could keep Alex for a few extra hours to go out to dinner, of course I said yes. Alexandro goes to his grandparents (father’s family) every morning before school and after school until I get out of work. He has several father figures there, he has 2 uncles and 2 aunts on his father’s side; he also has a lot of cousins to play with, so when he is there, he is never bored or alone.

I never talk about his father in a negative way; that is not an issue. I try to make his memory a sweet one and not cause more confusion in his mind. I would love to take him to his tombstone, but we did the memorial and burial in Mexico. He did get to see and spend time with him 1 month before he passed away, and we did go to the memorial and burial.


According to Alexandro he does like his therapist, so I don’t know what happened there; I have no idea why he decided to refuse in seeing her.

Yesterday I started a new approach, when his aunt brought him home; I stood by the door to talk to him. I told him babe I thought you and I where supposed to be like one. You and I have told each other everything with no lies; do you not trust in me anymore because it really hurts mommy’s feelings when you lie. I think this approach worked because I saw a reaction on his face and he said no mommy I do trust you. I said in a soft voice okay so if there is trust why do you think you need to lie to me about little things such as saying you brushed your teeth, did your homework, or shampooed your hair when indeed you haven’t done so? His response was I’m sorry I will try to be honest! That was a good response.

Right after talking to him he did his reading, read his bible, did his homework, took a shower and shampooed his hair, and brushed his teeth. I hope things stay like last night. We’ll see how it goes today. I have faith!

Ahhhhh today I have a dentist appointment for a cleaning!!! What a drag LOL... Write to you all later! Have a good afternoon and thanks for your comments.
